Amazing stuffed cabbage rolls made with Pumfu Sausage Crumbles!
Prepare the Mashed Potatoes
You can use your own recipe — here’s ours:
Ingredients
- 6–8 medium Idaho potatoes (unpeeled, cut into chunks)
- 1 cup olive oil
- 2–3 tsp black pepper
- Salt to taste
- Reserved potato water (optional)
Directions
- Boil potatoes in salted water until tender.
- Drain (save the water!) and mash or mix with olive oil, pepper, and salt.
- Add a bit of potato water if the mixture feels too dry.
Prepare the Cabbage
- Remove any damaged outer leaves and trim out most of the core.
- Place the whole head in a large pot with 2–3 inches of water, cover, and steam.
- As it steams, gently remove the leaves one by one with tongs.
- Continue steaming until all large leaves are removed and tender.
- Drain and cool the leaves.
Prepare the Pumfu Sausage Crumbles
- Poke holes in the plastic packaging to release the vacuum.
- Using both hands massage the package to break up the crumbles, then pour into a bowl.
Sauerkraut
Open and pour your favorite sauerkraut into a bowl
Assemble the Rolls
- Spread a medium layer of sauerkraut on the bottom of your casserole dish.
- Lay out a cabbage leaf and trim any thick core section.
- Add:
- ⅓–½ cup mashed potatoes
- 1 heaping tbsp Pumfu sausage crumbles
- 1–2 tbsp sauerkraut
- Press the filling gently, fold in the sides, and roll it up tightly. Don’t worry if some of the rolls split a little, just tuck them next to each other.
- Place each roll seam-side down in the casserole dish.
- Repeat until the dish is full.
- Top with a bit more sauerkraut.
- Bake uncovered at 350°F until heated through and slightly browned on top.
* If your cabbage leaves are small, overlap two to make one roll
Pumfu Cashew “Sour Cream” Sauce
Ingredients
- 1 cup cashew pieces
- 1 block Foodies Vegan Pumfu (crumbled)
- Juice of 2 lemons
- 1–1½ tsp salt (to taste)
- 1 tbsp granulated onion
- 2 tbsp maple syrup
- 1–2 cups water
Directions
- Blend cashews until fine.
- Add pumfu, lemon juice, salt, onion, maple syrup, and water.
- Blend until smooth and creamy, adjusting to taste.
- Drizzle some over the rolls before baking and serve the rest on the side!
