Pumfu Noodle Soup for the Soul!

The perfect feel good Soup. Simple, savory and filling. If youre under the weather Pumfu Noodle Soup really hits the spot. Perfect to warm up on a cold day!

Ingredients

  • 1 block Pumfu, marinated in all-purpose broth – see recipe
  • 3 cups chopped celery
  • 2 cups chopped onion, approximately 1 medium sized onion
  • 2-3 TBSP olive oil
  • 2-3 cups cooked linguini or spaghetti (cook al dente according to pasta box instructions)
  • 4 cups water
  • ½ cup soy sauce
  • ¼ cup Braggs
  • 2 TBSP granulated onion
  • 1 TBSP granulated garlic
  • 2 tsp black pepper
  • 1 tsp poultry seasoning
  • 3-4 TBSP nutritional yeast
  • Squeeze of lemon
  • Fresh parsley, chopped
    • Instructions

      • Add celery and onion to large soup pot with olive oil and salt & pepper to taste. Sauté on medium heat until they are translucent, about 5-7 minutes
      • Cut marinated Pumfu into quarter inch cubes, add to soup pot
      • Cut cooked pasta into 2-inch pieces, add to soup pot
      • Add water, soy sauce, braggs, spices, and nutritional yeast to soup pot
      • Continue cooking over medium-high heat until the flavors merry, about 10-15 minutes
      • Serve with a squeeze of lemon and chopped fresh parsley

      **PRO TIP – the pasta will soak up the broth, so when serving the next day you may want to add extra broth **Serves 4-6
